Delicate and slightly peppery

 

Noblanza pork loin sausage from Sánchez Romero Carvajal (Jabugo) 100% Iberian porks, reared in the Iberian dehesas and fed with acorns during montanera fattening period. Its diet is complemented with a special feed made of corn, wheat and barley. The traditional way of making this sausage involves removing any excess of fat, salting and curing it before packing the meat into a tripe casing.

 

Noblanza brand exceeds the standards set by the Quality Standard (Royal Decree 1083/2001) regarding breed, feeding and curing times.

Organoleptic details

Touch: firm, compact consistency.

 

Appearance: cylindrical or slightly flattened shape, and varying length. Its cross-section is uniform, smooth, with characteristic marbling fat and its colour varies from pink to red. 

 

To the nose and mouth: delicate, slightly peppery and smoky taste. Recebo with cereals gives this loin a sweet and balanced flavour.

Recommendations: remove the vacuum packaging one hour before eating. Consume within 1 month.

 

Storage: keep in a cold place (5-10ºC).

 

Presentation: vacuum packed cured pork loin.
