Set up in Jabugo in 1879, Sánchez Romero Carvajal is without doubt one of the best known and most prestigious names in the world in terms of Iberian products, with 5J and the Noblanza ranges as its two main lines.
Jabugo is a town located in Sierra de Aracena nature reserve, in Huelva, at an altitude of 600 metres. The peculiar combination of microclimate and vegetation (in surroundings traditionally dominated by pasturelands) in this region have converted it into a privileged location for aging, curing and maturing the finest Iberian hams.
The incomparable taste and quality of an Iberian ham from a pure-breed pig lies mainly in the characteristics of that breed and in its breeding and production processes.
Sánchez Romero Carvajal makes a careful genetic selection of its pigs, which are subject to strict quality controls to guarantee and ensure the purity of this breed, which is unique in the world.
The Sánchez Romero Carvajal pigs have passed the requirements of the current quality guidelines in many aspects, and in particular in respect of the purity of the breed.
The Iberian pigs are fed on acorns and aromatic herbs during the pasturelands phase, and the fact that they must wander through the Jabuga meadows to find their food means that they take longer to grow fat and causes the fat to infiltrate their muscles.
The result is flesh that is juicy, aromatic and with an incomparable taste, which are the characteristics of Sánchez Romero Carvajal. A product made in accordance with a tradition that has been passed down from one generation to another by master ham makers, who through visual observation and smell, guarantee the final product quality, converting each ham into a work of art that is unique and different.
